Sausage and Broccoli Pasta
METHOD
- Preheat the oven to 190˚C Gas 5.
- Prepare apples and vegetables.
- Heat the oil in an ovenproof pan over a high temperature, cook the sausages for 5 minutes or until brown all over, then remove from the pan and cover.
- Add the onion, carrot and pepper, sauté for 6-7 minutes over a low to medium heat until softened a little.
- Add the garlic, cook for another 2 minutes.
- Add the sausages, beans, tomatoes, tomato puree, basil, salt and pepper.
- Bring to a boil.
- Cover and put in the oven for 30 minutes, remove the lid for the last 10 minutes.
- Serve with mashed potatoes and green vegetables.

- 2 eating apples, diced
- 2 tblsp oil
- Sausages (whole)
- 1 onion, diced
- 1 carrot, diced
- 1 pepper, diced
- 2 cloves garlic, crushed
- 1 tin butter beans, kidney beans or chick peas, drained and rinsed
- 1 tin tomatoes
- 1 tblsp tomato puree
- Salt and pepper
- Basil, chopped to finish
