Roasted Sausage and Sweet Potato


  1. Preheat the oven to 190˚C Gas 5.
  2. Prepare apples and vegetables.
  3. Heat the oil in an ovenproof pan over a high temperature, cook the sausages for 5 minutes or until brown all over, then remove from the pan and cover.
  4. Add the onion, carrot and pepper, sauté for 6-7 minutes over a low to medium heat until softened a little.
  5. Add the garlic, cook for another 2 minutes.
  6. Add the sausages, beans, tomatoes, tomato puree, basil, salt and pepper.
  7. Bring to a boil.
  8. Cover and put in the oven for 30 minutes, remove the lid for the last 10 minutes.
  9. Serve with mashed potatoes and green vegetables.


  • 2 eating apples, diced
  • 2 tblsp oil
  • Sausages (whole)
  • 1 onion, diced
  • 1 carrot, diced
  • 1 pepper, diced
  • 2 cloves garlic, crushed
  • 1 tin butter beans, kidney beans or chick peas, drained and rinsed
  • 1 tin tomatoes
  • 1 tblsp tomato puree
  • Salt and pepper
  • Basil, chopped to finish
